Green Chilli Chicken Enchiladas...





Things have been so hectic this past month with traveling and such that I had given up on the whole cooking thing. Jonny and I went to California last weekend for business...he had to speak in front of about 600 people!!! (I could never do that by the way) We went with our friends Randy and Kara again which was fun!! The room we stayed in was really nice and such a good deal! Next weekend I am going to LasVegas too!!! Talk about exhausting!!! Jonny will be traveling at least once a week in the month of November! So during this time I will hopefully have a little time to have some fun with cooking again! Last night I decided to throw together some enxhiladas and they tasted so yummy! I thought I would share the recipe I tried...

Step Number one: Make the Sauce
In a large bowl add one large can of Macayos green enchilada sauce, with about 3/4 can of cream of chicken, a scoop of our cream, and a small can of green chillis together
Step Number two: Roll the enchiladas
Coat bottom of clear dish with a little sauce. Dip each corn tortilla in sauce, put a scoop of refried beans (I used the ones that have the Jalepeno' flavor), shredded chicken (I used the canned chicken from Costco), shredded cheddar cheese, and roll them up.
Step Number three: Add Final Touches
Add all the extra sauce on top with more cheese...then Bake in the oven for about 45 minuites. I added sour cream and some Rotelli tomatoes on top to add some spice! Turned out delish!!!! So yummy and so stinkin easy!!!Next on my list to try is Corn Chowder with Corn Bread... mmmm
